A delicious chocolatey treat for Easter

This recipe was devised by my mother for Easter, but it makes a delicious chocolatey treat for anytime of the year. Rather than forking out on expensive Easter Eggs, try making a nest of your own...

You will need:

  • About 220 grams of cooking chocolate. You can use plain or milk chocolate, whichever you prefer. For the ultimate chocolate blend, try mixing together some of each.
  • 1 pack of Rice Krispies (a cheap own-brand shop equivalent works just as well as the expensive kind).
  • 1 pack of small chocolate eggs (Cadbury's Mini Eggs are the ideal here).
  • 1 handful of sultanas/raisins (optional, but stops the mixture becoming too dry once set).
  • Roughly 10-15 cake cases.

How to Melt the Chocolate

Break up the chocolate into small pieces, place it into a glass bowl and melt. This can either be done in a microwave by heating on full power for 30 seconds (750W), after which you should remove the bowl and stir the chocolate well. Repeat again if necessary until all the chocolate is melted.

Alternatively you can use the hob. Place the bowl over a saucepan of hot (but not boiling) water, ensuring that the water does not enter the mixture. Stir as the chocolate melts, until is is flowing and ready for use. Be sure not to over-cook, as this will give a rather unpleasant taste.

If you have an Aga cooker, simply place the bowl filled with chocolate in the centre (the hottest part) and leave until fully melted.

Directions

  1. Once the chocolate is completely melted, add the raisins/sultanas and stir well.
  2. Add the Rice Krispies. Pour in about a handful at a time, mixing well as you go. You should aim to have no excess chocolate sitting in the bottom of the bowl, but all of the crispies should be well covered in a thick coating. Adding a small amount at a time will help to prevent any overspill, as well as ensuring more even results.
  3. Place into the cake cases by lifting the mixture out one spoonful at a time. Try and make each one as even as possible.
  4. Add the eggs. While the mixture in the cake cases is still soft, gently take 2-3 chocolate eggs and place them in the centre of each to create a 'nest.' Do this as soon as you have finished decanting the mixture into the cake cases, as once you leave them they will set and go hard.
  5. Leave your nests for about 1-2 hours until they have set completely.

Then enjoy!
